Recipe: Six Week & Thirty Minute Candied Jalepeño Bacon
Yes, this really does take six weeks and thirty minutes. Or about that. The good news is that once you've made the candied jalapeños recipe, this party only takes about thirty minutes. In fact, you can use the extra syrup from the recipe to make the bacon without waiting the six weeks. I just like the title Six Week and Thirty Minute Bacon because it sounds like you've got all sorts of time. 
But you certainly don't need all kinds of time to make this recipe. 
You only need: one package of thick-sliced smoked bacon and the syrup from my candied jalapeños recipe. If you've got a jar of candied jalapeños, you can mince a few of the candied jalapeños to sprinkle on at the end.

Preheat the oven to 275 degrees.
Grill the bacon or cook it in a pan. I prefer to use a copper-lined counter-top grill because I can get the entire package of bacon on the cook surface at one time.  Get a sear on the edges of the bacon, but not so much that it's completely cooked. Once you flip the bacon the first time, take a basting brush and spread the candied jalapeño syrup on the bacon as it continues to cook. 


I don't need to tell you what this is. You can probably smell it from where you're at.

Line a sheet pan with aluminum foil, shiny side up, and spray the foil generously with non-stick spray. 

When the bacon is still limp but getting close to done, flip it over again to brush jalapeño syrup on the side that hasn't had any yet. Use tongs or a spatula to lift the bacon onto the sheet pan, and coat again with the syrup.

Put in the oven for about ten minutes, checking periodically to be sure it isn't burning. The sugar in the syrup can quickly turn this lovely batch of bacon to a carbon briquette. After a few minutes, brush the bacon with one more coat of jalapeño syrup. Toss on some minced candied jalapeños if you want, and bake for just a couple minutes more.

Pull the bacon at your desired crispness; I prefer it crispy to the point where it will stay straight when holding it horizontal on one end, but you might prefer your bacon a little more on the floppy side.   

That's it! Simple, easy, and an incredibly delicious side.
